Instructions
- Preheat oven to 425°F.
For The Toasted Garbanzos:
- Drain garbanzo beans and pat dry.
- In bowl, combine garbanzos, olive oil, and za’atar. Toss to coat well. Spread into sheet tray lined with parchment.
- Toast in oven for approximately 20 minutes. Turning occasionally, until dark and crispy, but don’t let bean get hard and dried out.
- Remove and set aside.
For The Goat Cheese Spread:
- Combine goat cheese with dill. Mix well.
- Squeeze lemon and add to cheese mixture, to taste.
For The Gyro
- Spread goat cheese onto pita.
- Top with toasted garbanzos.
- Add sliced tomato, sliced cucumber, and romaine lettuce.
