Acorn & Chayote Ratatouille

Ready in under 30 minutes, you'll love this perfectly spicy Creole twist on the classic French vegetarian stew!

Instructions

  1. Warm the olive oil in a large Dutch oven.
  2. Add the onion and cook until translucent.
  3. Add each of the vegetables at 2-minute intervals starting with the green plantains, then acorn squash, chayote, Anaheim chili and red pepper. Stir well.
  4. Season with garlic, oregano, cumin, black pepper and salt.
  5. Moisten the mixture with the orange juice.
  6. Simmer for 5 minutes until tender. Serve.
