These vibrant blueberry muffin-inspired overnight oats are the perfect start to your day!
Instructions
- In a food processor or blender, add milk, frozen blueberries, honey, lemon juice, cinnamon, almond extract and salt. Blend until smooth. The mixture may be frothy, let it sit for a few minutes to settle.
- Add ½ cup of oats and ½ tablespoon of chia seeds into two separate airtight containers.
- Pour the blueberry milk mixture into each container, evenly. Stir each container to combine evenly. Put lid on each container and place in refrigerator for at least 4 hours, preferably overnight.
- The next day, remove from fridge and stir. Add your toppings of choice and enjoy either hot or cold.
